While serving up great entrees to your guests is good form, simplicity can be nice when it comes to hors d'oeuvres. One of the best ways to sate your guests appetites before dinner is served is with a wine and cheese spread.
Serving up cheese saves couples the trouble of coming up with different hors d'oeuvres that will please all palettes and still provides variety for guests. Plus, it is difficult to find someone who doesn't appreciate wine and cheese.
Be sure to provide plenty of different cheeses, such as Gouda, Manchego, Camembert or brie, and old stand-bys such as cheddar, Muenster, and Monterrey Jack. If you and your spouse are cheese aficionados, include some of your favorites that guests may not have had the opportunity to try before.
Crackers are a must (consider getting different types), and you can serve up bread or toast points if you are feeling ambitious.
Have your caterer set up a table with all the various offerings where guests can go and mingle while sampling cheeses. Be sure to provide toothpicks. Also, if you feel so inclined, include things such as olives, marmalade, and almonds to pair with the cheese.
Place placards on the table that suggest wine pairings for the cheeses you are serving up, so that guests will know what to ask the bartender for (and what you have available).
